First rule: always to have a high quality product and an ultra-cool, a reason why with our cooled small vans, we are going to stock up twice a week directly in fishermen's boats of Chioggia (main port of the Alto Adriatico).
Second rule : if the fish is good, it does not need sauces or particular aromas, it is only enough to cook it in a simple way to highlight all the perfume of the sea. Our international Chef for several years dedicates with whims and passion in the cooking of the sea. None comments could replace a tasting of its specialities.
